Recipe Friday: Berry (Surprise!) Smoothie

What a way to ring in the new year: a fresh, fruit-filled drink that’s quick to fix and will load you up with nutrients! I drink this smoothie at least once a week (or some variation thereof), usually after a tough workout. I don’t know, somehow I feel like I’ve “wasted” my workout if I load myself down with something greasy—and the tart-sweetness of this drink hits the spot!

So, what’s the surprise, you ask? Wait for it—you don’t taste it, trust me, so don’t get freaked out. I put a handful of baby spinach into this smoothie. Did I just see a sourpuss face out there? I hope not, because you really don’t taste the spinach at all! (That is, unless you become part of the Green Monster community—spinach is the centerpiece of their green drink!) Why spinach? Spinach is a great source of iron, but in order to fully absorb the iron in plant foods, we have to consume it along with vitamin C. That’s why it’s great to whizz it in the blender with some OJ and berries!

So, try this one on for size…

Berry (Surprise) Smoothie

1 banana, broken into chunks
1 c frozen berries of choice (I like the ones from Trader Joe’s. I’ll go for either their raspberries or one of the berry mixes. You want B and C vitamins? We got ‘em!)
1-2 c baby spinach (start with the smaller amount if you’re scared!)
1/2-3/4 c orange juice, depending on desired consistency
Optional: add plain yogurt or coconut butter if you want creaminess, or protein powder if you’re of that ilk. But most of us get the required 12-20% of protein in our daily diet, anyway…

Place ingredients in blender, in order listed above. Blend blend blend!

And enjoy your sunshine in a cup! Now, tell me… do you taste the spinach? But you can certainly keep your friends and family guessing on the surprise ingredient until you tell ‘em. (Hey, parents, here’s a way to sneak veggies to your kids, eh?)
